Classic Southern Greens with Sweet Flavor After Frost

'Georgia Southern' is the classic heirloom collard variety that has been a Southern staple for generations. This reliable variety produces large, blue-green leaves with a sweet, mild flavor that improves dramatically after frost. The non-heading plants grow 24-36 inches tall and continue producing tender leaves throughout the growing season. Reaching maturity in 60-75 days, Georgia Southern is extremely cold hardy and can withstand temperatures down to 10°F, making it perfect for fall and winter harvests. The leaves are rich in vitamins A, C, and K, as well as calcium and iron. Perfect for home gardens where traditional, nutritious greens are desired.

Growing Tips

Georgia Southern Collards thrive in full sun to partial shade and rich, well-drained soil. Plant in spring for summer harvest or mid-summer for fall/winter harvest (fall planting produces sweetest flavor). Space plants 18-24 inches apart in rows 30-36 inches apart. Keep soil consistently moist and fertilize regularly. Harvest outer leaves when 8-10 inches long, leaving center to continue producing. Flavor is best after a light frost.
