Culinary & Growing Tips

Borage flowers make stunning garnishes for salads, summer cocktails, lemonade, and frozen into ice cubes for a beautiful presentation. The young leaves can be used fresh in salads or cooked like spinach, though older leaves become fuzzy and less palatable. The cucumber flavor works beautifully in Pimm's Cup, gin and tonics, and fruit salads. In the garden, plant in full sun with well-drained soil. Borage self-sows readily, so allow some flowers to go to seed for continuous plants. The brilliant blue blooms are favorites of bees and make excellent companion plants for tomatoes and squash.
